Here is another Pinterest worthy recipe, first appearing in Fitness Magazine, to add to your recipe boxes!!! It's a Vegetarian dish and even though I'm not a Vegetarian I really enjoyed it! The goat cheese was my favorite part and this was the first time I made caramelized onions! Yuummmmy!
What You Will Need:
1 tablespoon olive oil
2 cups thinly sliced onion
1 teaspoon sugar {I used Splenda}
1/4 teaspoon salt
9 ounces baby spinach {I used ready-to-eat Leaf Spinach}
4 8 inches whole-wheat flour tortillas
4 ounces semi soft goat cheese
2 medium tomatoes, thinly sliced
Whole Wheat Tortillas-Splenda-Onion-Tomato-Spinach-Goat Cheese-Olive Oil |
Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, sugar and salt; cook, stirring occasionally, until onion is dark golden brown.
Remove from pan.
Add the spinach and 1 tablespoon water to the skillet; cook 2 minutes, or until spinach is just wilted. Remove from skillet and turn off heat.
Spread a quarter of the goat cheese on each tortilla and top with spinach, tomato and onion.
Fold closed and press lightly. Heat the skillet and place two folded quesadillas in it; cook two minutes per side, or until golden brown and lightly crisp. Repeat.
Enjoy!!!

Yum! Looks so so good, minus the tomatos for me, I'm not a fan! But You could probably add a bunch of veggies to this, like peppers, zucchini, etc!

ReplyDeleteI saw that all the time too. When we make dinner I eat everything else on my plate because I am so interested in it before I touch my meat. I also couldn't give up seafood. I LOVEEEE it!
